Dundas sought as recipient of new craft brewery

65-hatt-stOwner of Flat Rock Cellars in Lincoln, ON, Ed Madronich, has revealed plans to introduce a new craft brewery, Shed Brewing Company, in the town of Dundas, near Hamilton. The name, Shed, is a amalgamation of the Madronich’s and his partner, Shawn Till’s, first names

The prospective site, formerly a curling and skating rink at 65 Hatt St., would first need to be approved for rezoning by the city, which is already reportedly enthusiastic. If approved, the brewery could be in operation in the 13,000 sq-ft. building as early as Fall 2013 following renovations.

Madronich was indicated that if zoning is not approved, Dundas will still be his locale of choice.

“I’m not a restauranteur. I want to sell my beer to restaurants in the community. I don’t want to be a competitor. I don’t have a restaurant at my winery,” Madronich said. “It’s a craft brewery. There is an art and a craft to it.”

“It really is a tourist-destination,” Madronich added. “That’s why I think it fits in Dundas. People already come to spend the day in the shops.”
