Habits Gastropub relaunching as Folly Brewpub in Toronto
Toronto, ON – Habits Gastropub, who added an onsite 1.5hl nanobrewery in October 2014, today announced a pending relaunch under the name Folly Brewpub.
“Owners Luís Martins and Michelle Genttner see this as an important transformation in their business. Along with the new name, Chef Luís is preparing a new menu to pair with the more beer-focused direction,” explained the announcement.
Christina Coady and Chris Conway will remain as head brewers. “When we started,” Conway says, “we were using a 1.5hL system in the kitchen with one single 2.5hL tank in the back room. Now we’ve grown to eight 2.5hL tanks, allowing us a weekly production of around 10hL in a newly renovated, open-concept brewery space.”
The brewpub says it will continue with Habits’ approach to beer, focusing on saisons, farmhouse ales, mixed fermentation brett beers, and a growing cellar of sour projects in wine barrels. Folly will focus on four main brands: an Old World Spelt Saison, a New World Saison, a Farmhouse IPA, and a Farmhouse Dubbel, all of which will be released at Habits in the weeks before the relaunch.
Folly Brewpub has also recently received its manufacturing licence for offsite sites along with a planned bottle shop for 2016.
A launch party is planned for early October with further details to be announced.
