Halcyon Barrel House launches wild and sour line
Vankleek Hill – Halcyon Barrel House – a new brewer focusing on “‘new world’ wild and sour ales, using ‘old world’ traditions” – launches this May 2017 with Infinity Mirror Brett IPA.
“Halcyon refers to a past that we remember fondly – and that’s how I am approaching brewing our beer,” says Bryce McBain, Brewmaster. “We are looking to old-world, more traditional brewing methods to inspire how and what we brew today.”
McBain’s Halcyon is part of the Beau’s Brewing Co. family, where he has been a brewer since 2011. Beers are brewed at Beau’s then transferred offsite to ferment and age in barrels.
“The creative element is so much greater than standard, modern brewing. Instead of a single strain of yeast, we’ve got many different strains and cultures contributing flavour and aroma,” adds
McBain. “The barrels add subtle vanilla, oak, and tannins, as well as a touch of whatever was aged in that barrel before. And with the nuances of slightly different fermentation taking place in each barrel, there’s a mysterious, unpredictable element to the art of this kind of brewing. It definitely feels like a more romantic way of making beer.”
Infinity Mirror Brett IPA (6.5%) is brewed with oats and wheat, with Amarillo, Nelson Sauvin and Citra hops then aged in red wine barrels producing notes described as”‘ripe – tropical – funk”.
It launches in 600ml bottles for $9.95 each starting May 25, 2017 through Beau’s retail store, followed by the LCBO and establishments across Ontario including Arabella Park, Bar Hop, Birreria Volo, Brux House, Cest What, Get Well, Hungry Brew Hops, Laughing Buddha, Snackbar, Tequila Bookworm, The County Canteen, The Craft Brasserie, The Only Cafe, The Wren, and Trinity Common.
