Haliburton Highlands Brewing slated to open Summer 2014
Haliburton, ON – Haliburton Highlands Brewing Co. this week announced its plans to open in Summer 2014 in its namesake county.
Husband and wife team, Michael and Jewelle Schiedel-Webb, plan to build their brewery at Abbey Gardens in Haliburton, a 2-acre community market garden promoting sustainability. Abbey Gardens will utilize the brewery’s spent grains and incorporate a closed-loop system to recycle cooling water used in the brewery’s production process.
“We are excited to brew handcrafted quality beer here in the Highlands, and especially to be working together with Abbey Gardens”, said Michael Schiedel-‐Webb, head brewer. “Abbey Gardens’ objectives and operating principles and our vision and goals for Haliburton Highlands Brewing are deeply aligned. We look forward to contributing to the robust local food network in the Highlands.“
Brewmaster Michael Schiedel-Webb was educated at the Siebel Institute and World Brewing Academy in Chicago and has worked with breweries in Utah and Texas. Together with his wife, Jewelle, who brings 20 years of management and operations experience, the brewery plans to brew a range of craft beers incorporating local ingredients.
