Innocente Brewing transplants from Scotland to Ontario
Steve Innocente is transplanting his contract brewery in Edinburgh, Scotland to Ontario.
The year-old Innocente Brewing Co. worked with Alechemy Brewing in Livingston churning out Innocente Bystander, a 4% ABV, 125 IBU American pale ale, along with a premium lager and a bitter.
Innocente moved with his family to Scotland almost 10 years ago to take on a post-doctoral focusing on using Saccharomyces cerevisiae (yeast) as a model system attending the University of Edinburgh.
“I had brewed on and off during my undergrad and PhD and I didn’t start up again until after my fourth child was born about four years ago. I got back into brewing because I couldn’t get out to my local pubs and the supermarket beer was getting a bit grim.”
In Ontario, Innocente is planning the development of his brewery in North Waterloo to open in December-January if all goes to schedule. Until then, Innocente will be looking to contract his brewing locally.
A core repertoire of 3-4 brands supplemented by cask versions and one-offs would be offered.
“I’d like to recreate Conscience which was my last (and most successful) commercial beer in Edinburgh”, he explains. “I’ve done in the past have been super-hoppy lagers (95IBUs), a peat-smoked 12% stout aged over cocoa nibs, various fruit-infused pale ales and a chocolate wasabi stout.”
Availability will be focused initially on the Kitchener- Waterloo area and Toronto and Innocente’s old local in Hamilton, the Winking Judge. LCBO availability is also in the plans.
