Full details released for Siebel and Durham College brewing courses


Whitby – Durham College and Chicago’s Siebel Institute of Technology have released full details and dates for its new Brewing Quality, Consistency and Food Safety Basics Certificate Program.

Designed to equip brewers from across Ontario and beyond with the additional knowledge and skills needed to further advance the quality, consistency and food safety of their product, these courses will enable individuals aspiring to build their career in Canada’s craft brewing industry to learn from master brewers and other experts in the industry, while studying a range of topics in the state-of-the-art learning environment offered by DC’s Whitby campus, the brochure states.

Sensory Analysis For Flavour Production And Control

Date: Monday, February 13, 2017
Location: Durham College, Whitby Campus, 1610 Champlain Avenue
Duration: One Day
Level: Brewers New To The Industry Or Looking To Expand Their Skills
Tuition: $825 Plus HST

Course Topics:
Overview of the brewing process including origins of flavours.
Introduction to sensory evaluation and the beer flavour wheel.
Malt, hop and water evaluation.
Brew house, fermentation and maturation associated flavours.
Post fermentation and contamination associated flavours.

Brewing Microbiology

Date: Monday, February 20 To Friday, February 24 And Monday, February 27 To Thursday, March 2, 2017
Location: Durham College, Whitby Campus, 1610 Champlain Avenue
Duration: Nine Days
Level: Intermediate
Tuition: $5,895 Plus HST

Course Topics:
Appropriate methods for biological and sanitary control within a brewery.
Essential modern-day tools for effective microbiological evaluation of process and product.
Micro-organisms likely to occur during the various stages of the brewing process.
Microbiology and microscopy for the isolation of and identification of micro-organisms.
Latest developments in brewing microbiology.

Basics Of Commercial Brewing

Date: Monday, April 24 To Friday, April 28, 2017
Location: Durham College, Whitby Campus, 1610 Champlain Avenue
Duration: Five Days
Level: Individuals New To The Brewing Industry
Tuition: $3,895 Plus HST

Course Topics:
Overview of the brewing process.
Malting, adjuncts and other malts.
Brewing water and brewer’s yeast.
Hops and milling.
Mashing and wort separation.
Wort boiling, whirlpool, wort cooling and aeration.
Fermentation.
Maturation, storage, carbonation and filtration
Packaging and warehousing practices.
Cleaning and sanitizing.
Beer dispense and serving.
Biological and quality control.
