Spirit of York Distillery now open in Toronto Distillery District
Toronto – Spirit of York Distillery Co. is now open in Toronto’s Distillery Historic District located at 12 Trinity Street.
Co-founder Gerry Guitor tells the Toronto Star, “We believe that the sum of all the different social, cultural and ethnic groups is greater than its parts, so we’re going to try to develop products for Little Italy and Greektown (likely grappa and ouzo, but they’re playing their cards close to their chest) and all the other communities. Ideally, we want this to be their distillery.”
Local ingredients are in play including Ontario grains from Norfolk and Brant and aquifer water from Springwater, used in Spirit of York’s Vodka and Gin.
The distillery, housed in the former Gooderham & Worts malting facility, boasts two German-sourced 40′ copper column stills, a retail and tasting area, event space.
Spirit of York also features a bitters bar where, according to Toronto Life, “Simon Ho (The Drake, Fat City Blues) is currently infusing everything from the typical roots, barks and herbs used in making gin, to things like lavender, coffee, papaya, cherries and Szechuan peppers (each bottle was labelled by his aunt and dad). Here, Ho will work with guests to create their own bitters.”
Toronto Life notes the distillery team is comprised of 9 staff and 35 shareholders.
