Wild Muskoka yeast used in new Sawdust City beer

Gravenhurst – Sawdust City Brewing has announced its upcoming Limberlost Saison will be brewed with a novel wild yeast cultivated from Muskoka’s Limberlost Forest and Wildlife Reserve in conjunction with Escarpment Labs.

“Deep in the Limberlost Forest amongst the foliage and wildlife, we struck out with the fine gents from Escarpment Yeast Labs to see what we could discover. They swabbed, plated and harvested many a sample that day,” says brewmaster Sam Corbeil.

Escarpment Labs isolated a yeast strain tolerant to alcohol with no off flavours, then blended with a strain of brett-brux to reduce sweetness.

Using local hops from Clear Valley and a simple malt profile, Sawdust City hopes for a crisp dry beer with a yeast forward flavour.
